Sweet Potato and Apple Kugel
Tomorrow is Yom Kippur and although I am not Jewish, I do believe that many of our religious traditions involving diet are rooted in good health. The recipe is great in that it offers seasonal foods, it's gluten-free, kosher, low sodium and all around healthy. Enjoy and get a "grate workout"! ;-)
INGREDIENTS (left column):

How many times have you not felt like working out...and didn't? Well studies now show that being physically active actually boosts your mood and can protect against depression. Rates of depression and suicide are increasing at alarming rates and although we might have some of the same pressures and stresses of yesterday, how we take care of ourselves today is different. Many times we can feel emotionally distraught which has a ripple effect causing us to become less active and eat unhealthy foods. Fall is my second favorite food season and for many reasons. It can be difficult to transition from berries, peaches and all of the sweet tastes of summer but mother nature knows that and provides us with things that make it easier. An apple a day does keep the doctor away and for a variety of reasons from the pectin in the skin to the nutrients in the flesh. Pears and sweet potatoes are also in season and provide many health benefits while repairing much of the sun's summer damage. The cool thing about Fall vegetables that I absolutely love is that they can be prepared in a variety of ways that best suit your taste. So bake a pear, sauce an apple and souffle a sweet potato and enjoy all the health benefits that mother nature provides.
